Lemon Drizzle Cake

Serves 8


½ c softened unsalted butter
¾ c sugar
2 large eggs
3 fresh lemons, zest & juice
1 ½ c ap flour
2 t baking powder
¼ c whole milk
½ c sifted powdered sugar


1. Preheat oven 350°F.
2. Cream butter & sugar.
3. Slowly mix in beaten eggs until light & fluffy.
4. Add lemon zest, flour & baking powder. Mix well.
5. Add 2 T lemon juice & milk. Mix well.
6. Pour batter into greased loaf pan; bake 45 min.
7. Combine remaining lemon juice & powdered sugar into glaze.
8. Remove cake from pan once cooled.
9. Pierce top of cake generously; slowly spoon glaze over cake until all absorbed.
