Serves 8
Ingredients:
1 tbsp olive oil
1 cup carrot & leek, ½” dice
½ tbsp garlic, minced
½ tbsp ginger, minced
8 cups beef broth
2 tbsp tamari
pinch of crushed red & black pepper
8 oz flank steak, cooked, sliced on bias
5 oz ramen noodles, cooked
½ cup shiitake mushrooms, sliced, sautéed
4 hard-cooked eggs, sliced
¼ cup radish, sliced
¼ cup scallions, sliced
¼ cup cilantro, chopped
¼ cup peanuts, chopped
8 lime wedges
Procedure:
- Sauté the leeks & carrots until they begin to soften.
- Add garlic & ginger; cook another 2-3 min, until fragrant.
- Stir in the beef broth, tamari, red pepper, & black pepper.
- Bring to a boil & simmer for 20 min.
- Strain broth, discard solids.
- Add ramen noodles to the broth & simmer for about 3 min.
- Place the cooked noodles in a bowl & ladle warm broth on top.
- Add steak & remaining ingredients to the bowl or serve on the side.
Note:
*Get creative with garnishes; sautéed bok choy, fresh spinach, spicy peppers, etc.
