Elote (Mexican Street Corn) Mexico

Serves 6

ó cup mayonnaise
2 tbsp cilantro, chopped
1 tsp garlic, chopped
1 pinch cayenne pepper
6 corn on the cob, shucked
1 cup cotija cheese, finely crumbled
½ tsp ancho chili powder
6 lime wedges

1. Preheat grill to medium-high heat.
2. Mix mayo, cilantro, garlic & cayenne in small bowl.
3. Grill corn until nicely charred.
4. Brush with mayo mixture; lightly roll in cheese.
5. Place corn on serving platter; sprinkle with chili powder.
6. Serve lime wedges on the side.

*Cheese should be sparsely applied to not overwhelm the other flavors. More cayenne pepper & cilantro may be added as garnish.
