Ingredients:
2 large heads of cauliflower
2 T olive oil
½ t salt
½ t black pepper
1 t paprika
½ t garlic powder
8 T butter, melted
2 t minced garlic
2 T fresh sage, coarsely chopped pinch ground black pepper
Procedure:
1. Cut cauliflower heads into slices, about ¾” thick & place onto baking sheet. (You’ll get 2-3 full slices from each head, but ends will likely fall apart into florets; save for another recipe or roast them on same sheet pan).
2. In a small bowl, mix together the olive oil, sea salt, ground black pepper, paprika, & garlic powder. Brush olive oil mixture over both sides of cauliflower steaks.
3. Pan Seared Method: Preheat large skillet or cast iron pan over medium heat. Drizzle a little olive oil in pan, add cauliflower steaks & cook for 5 mins, pressing with a spatula to get full color on all parts of steak. Flip & cook for 4-5 more mins until browned.
4. Oven Method: Preheat oven to 425ºF. Line baking sheet with parchment paper. Bake cauliflower steaks in oven for 10 minutes. Flip & bake for another 10-15 minutes, or until tender & browned.
5. Melt butter in medium sauce pan set over low medium heat, when butter begins to bubble slightly add garlic, stir for 1 min. 6. Add chopped sage, continue to stir 1 to 2 mins, until butter turns light brown & has nutty flavor. Remove from heat, season & pour over cauliflower steaks.
