White Chocolate Cherry Truffles

Serves 12

Ingredients:

9 ½ oz white chocolate chips
6 ½ T heavy whipping cream
1 ½ T cherry liquor (Kirsch)
24 dried cherries
12 ¾ oz white chocolate chips
24 dried cherries

Procedure:

1. Put the first quantity of white chocolate in a medium bowl.
2. To make ganache, heat heavy cream to just about a boil.
3. Pour heated cream over chocolate and let sit for 30 seconds. Stir to incorporate chocolate and cream.
4. Stir in cherry liquor until combined. Let cool completely.
5. Line a sheet pan with parchment paper.
6. Scoop about 1 tbsp balls of ganache and lay on a parchment lined pan. Repeat until all ganache is used.
7. Press a dried cherry into each and roll it into a smooth ball. Refrigerate for 2 hours.
8. Remove from refrigerator and let sit for 10 mins before coating.
9. Melt the second quantity of chocolate in a small bowl and stir until smooth.
10. Using a fork, dip each truffle in melted chocolate and place on a parchment lined baking tray. Add one dried cherry to the top before the chocolate sets completely.
11. Repeat until all truffles are made. Store in refrigerator.
